The Paper Towel Trick for Hardy Herbs
Hardy herbs like rosemary, thyme, and sage do best when wrapped loosely in a slightly damp paper towel, placed in an open plastic bag, and kept in the crisper drawer.
The Bouquet Method for Soft Herbs
Treat soft herbs like parsley and cilantro exactly like fresh flowers. Snip the very ends off the stems, place them upright in a glass with an inch of water, and loosely cover the top with a plastic bag. Keep them in the fridge, and they will easily last two weeks.
Basil: The Rebellious Herb
Never put basil in the refrigerator! Cold temperatures will turn the leaves black. Snip the stems and keep them in a jar of water on your kitchen counter, out of direct sunlight.
Freezing Herbs
If you still have too much, chop the herbs, put them in an ice cube tray, cover them in olive oil, and freeze. Pop a cube into a hot pan whenever you're making soup or pasta sauce.
