Ingredients

  • 4 salmon fillets(skin on or off)
  • 1 cup cherry tomatoes(halved)
  • 0.5 cup kalamata olives(pitted and sliced)
  • 0.25 cup feta cheese(crumbled)
  • 2 tbsp olive oil
  • 2 cloves garlic(minced)
  • 1 lemon(juiced)
  • 1 tbsp fresh oregano

Instructions

Preheat oven to 400°F (200°C).

Place salmon fillets on a parchment-lined baking sheet.

In a bowl, mix tomatoes, olives, garlic, oregano, olive oil, and half the lemon juice.

Spoon the tomato mixture generously over the salmon fillets.

Bake for 12-15 minutes until salmon easily flakes with a fork.

Remove from oven, sprinkle with feta cheese, and squeeze remaining lemon juice over top.

Chef's Notes

Watch the salmon closely! It continues to cook slightly after being taken out of the oven. A meat thermometer should read 145°F.
