A brilliant fusion of Italian pasta and Indian chicken tikka masala. Rigatoni tossed in a rich, spiced tomato and cream sauce.

Ingredients
- 1 lb rigatoni pasta
- 1 lb chicken breast(cubed)
- 1 cup heavy cream
- 1 can (15oz) crushed tomatoes
- 2 tbsp garam masala
- 1 tbsp smoked paprika
- 1 onion(finely chopped)
- 3 cloves garlic(minced)
- 1 tbsp ginger(grated)
- 0.25 cup fresh cilantro(chopped)
Instructions
Marinate chicken with yogurt, half the garam masala, and spices for 15 minutes.
Boil the pasta in salted water until al dente. Reserve 1/2 cup pasta water.
Sear the chicken in a large skillet until browned, then remove.
In the same skillet, sauté onions, garlic, and ginger until soft.
Stir in remaining spices, then add crushed tomatoes. Simmer for 10 minutes.
Stir in the heavy cream and return chicken to the pan.
Toss the cooked pasta into the sauce, adding pasta water if needed to thin.
Garnish with fresh cilantro.
Chef's Notes
A great way to use up leftover chicken tikka if you have it! Works wonderfully with vegetarian paneer as well.
